The Start of a wine program is a mix of inspiration and structure. Applying the techniques of a writer working and re-working a list. It is time consuming but amazing. We continue to remind ourselves that balance has to be on our minds at all times. We’re looking for wines that are harmonious with the dishes that we’ll be creating, prices that reflect value in a quality price ratio and various price-points to choose from. I can’t express enough that if a guest says to me that they don’t want to spend more than $30 I’ll be as pleased finding the perfect wine for them within those parameters, but if you wish to spend more, perhaps on that bottle that you’ve always wanted to try or maybe one that brings back memories of that special trip to a vineyard in a far off land, I’ll work as enthusiastically to facilitate that as well.
We’re relying on past experiences with certain wines while exploring others that are new to us, after all that’s why we love wine, right? To be able to grow and learn about new producers and renew our passions for those that helped us fall in love with wine in the first place. You might be surprised at some of the wines on the list, as they might be too standard, as I’m continually surprised and reassured of their quality. On the other hand you’ll be pleased to know that there are a great many wines that you might be experiencing for the first time. Some are brand new and some are multigenerational families that are re-emerging or emerging for the first time on American soil.
